Black rice vinegar sauce from Pat Chun is made from rice vinegar, herbs, sticky rice and salt.The vinegar is very dark (dark brown to black) of color and very aromatic and spicy in taste.Black vinegar is widely used in Chinese cuisine.
Black rice vinegar can be used with stir-fry as well as with simmer dishes.In combination with some soy sauce in the dish, the taste sour, sweet and salt is balanced.As a dipping sauce, black vinegar gives an intense taste to the dish.To make dipping sauce add brown sugar and finely chopped garlic.
