Tomoshiraga somen are very thin noodles, made from wheat flour and salt.Traditionally sums are made by stretching the dough with the aid of vegetable oil to make very thin strips and then air-dried.In Japan it is very popular to serve the ice-cold somen in the summer months.
These versatile somen can be served either cold or warm.Combine the cold somen with a dipping sauce (tsuyu) based on dashi and soy sauce with some flavoring such as ginger and spring onion.Bring the somen to boil for 2-3 minutes in boiling water with a spoonful of salt, then drain and rinse well under running cold water.
